North Sea langoustine
Pumpkin, sea buckthorn, kombu
Barely warmed over oak embers so the flesh stays sweet and translucent. Pumpkin cooked down with kombu gives depth, and sea buckthorn cuts through it like a bright cold morning on the dunes.
