‘01The room
Candlelight,stone and smoke
The Onyx sits in the nave of a deconsecrated chapel on the Kapelstraat. Twenty-four seats under the vaults, a hearth where the altar stood, and a record room in the side chapel that stays open long after the kitchen closes.

‘03The chef
“I cook the way the building sounds. Low, warm, a little echo. Nothing on the plate should shout, but you should remember all of it on the way home.”
Born in Borgerhout, trained in Ghent and Copenhagen, home since 2014. A cook who talks more about farmers than about technique, and keeps a turntable at the pass.
